Los Angeles vs. New England: Super Bowl LIII Gameday Recipes

The 53rd NFL Super Bowl is almost here. Today we bring you part two of our two-part series on planning and hosting a tremendous Super Bowl party. In part one, we provided a game plan to follow that would help make your party a big hit. In part two we are bringing Game Day Super Bowl recipes that will provide your guests with some delicious dishes.

LA vs. NE: Super Bowl LIII Recipes

We’ll be honoring both teams playing in the Super Bowl. For the New England Patriots, we will have our Boston Baked Beans recipe. The Los Angeles Rams will be toasted with our infamous Spam Sliders, renamed Rams Sliders for the event. We will also include our version of the infamous burger called The Juicy Lucy that will amaze your guests. Additionally, we must have a dish for the recently departed New Orleans Saints who should be playing in the Super Bowl. Yes, they certainly deserve a spot in our lineup for the Super Bowl Party.

Appetizer Round

We’re going to begin with two incredible appetizers, our Rams Sliders and Grilled Bacon-Wrapped Shrimp. These two recipes will start your Super Bowl party off right and will certainly impress your guests.

Rams Spam Sliders

Grilled Spam Sliders make a great appetizer. They are easy to make and will definitely be a big part of the conversation at your Super Bowl party. Your regular guests should already be familiar with your infamous Spam Sliders by now. Any new guests will have to be convinced to try them. You can help them by passing along some useful information about Spam found at Spam.com:

Be sure to cut a couple of sliders into quarters for the newbies to sample and get over their fears. Once they bite into them they will be forever fans of Spam Sliders.

Ingredients

  • 2-3 cans of Spam, any variety
  • 18 Hawaiian rolls
  • Your favorite cheeses with bold flavor: pepper jack, Swiss, horseradish, manchego, gouda, etc.

The first step is to light your grill with 20-25 charcoal briquettes in the center. As the charcoal is getting ready, remove the Spam from the cans. Slice each Spam loaf into five to six one-inch thick slices. Have the cheese cut into 1/4 inch thick pieces that are large enough to cover the Spam. Once the coals are ready, spread them out to cover the bottom of the grill. Grill your Spam slices for about 4-5 minutes on each side, adding the cheese to the sliders once both sides are browned evenly. Cut open the Hawaiian rolls and place the Spam sliders onto the rolls and serve. These will be the hit of your Super Bowl party!

Grilled Bacon-Wrapped Shrimp

Grilled shrimp is amazing, but wrapping your shrimp with bacon takes this incredible appetizer to a whole new level.

Ingredients

  • 2 pounds 9/12 or 16/20 sized uncooked shrimp
  • 1 pound of bacon
  • Teriyaki marinade (optional)
  • Salt & pepper (optional) 
  • Cajun spice (optional)
  • Wooden skewers

It’s best to buy your uncooked shrimp already “peeled and deveined” which will save you time prepping. First, take your thawed uncooked shrimp out of the package and rinse in cold water removing any shells or tails. Using paper towels, dry off the shrimp. If you are using a marinade, place the shrimp in a gallon-size Ziploc bag and add the marinade 1-2 hours before grilling. If you do not have a marinade, you can place the shrimp in a plastic bag then drizzle in olive oil and Cajun Spice. 

Next, cut your bacon into half slices. Take one-half slice of bacon and wrap it around a shrimp, adding seasonings if you choose. Gently slide the wrapped shrimp onto a skewer so the bacon and shrimp are securely attached. Be sure to skewer both ends of the shrimp so they do not “spin” while grilling. Continue to add wrapped shrimp until the skewer is full. Do this until all the shrimp are bacon-wrapped.

Grill the skewers indirectly on your charcoal or gas grill. The bacon drippings will cause flare-ups so be careful if using gas. Flip the skewers every 3-5 minutes until the bacon is completely cooked on all sides. The shrimp will be done when the bacon is finished. Remove the skewers and serve to your guests on a large platter. They will be in awe of your bacon-wrapped shrimp and the incredible grilled flavor!

The Main Events

The Juicy Lucy

The Juicy Lucy is a burger not found at many tailgates or Super Bowl parties. Your guests will definitely be impressed when you bring out the well-known, seldom seen burger of lore.

Ingredients

  • 3 pounds 80/20 ground chuck
  • 1 tablespoon granulated garlic
  • 2 tablespoons Lawry’s Season Salt
  • 1 tablespoon black pepper
  • 6 ounces of your favorite barbecue sauce
  • 1 large block of cheddar, jalapeno jack, or Swiss cheese
  • Roll of wax paper

Combine the meat, seasonings, and BBQ sauce in a large bowl and mix them together gently. Once mixed, portion out 1/4 to 1/3 pound burgers. You’ll need wax paper in the next step to create this burger classic. 

Take each 1/4 to 1/3 burger portion and place it between two pieces of wax paper. Carefully press out the burger meat into thin patties making sure they are even all around. Between the two patties you are going to place a 1/2 inch thick slice of your favorite cheese cut from a cheese block. Cheddar, Swiss, or jalapeno jack work best. Once you have the cheese in place, take the edges of the two patties and press/crimp them completely all around the burger. This will prevent the cheese from leaking out while grilling. Serve the Juicy Lucy’s along with your favorite toppings, then sit back and watch your guests faces as they bite into your creation. They will soon understand how this burger classic got its name. 

Grilled Shrimp Po’ Boys

Po’ Boys are being presented in honor of the New Orleans Saints who many believe should be playing in the Super Bowl. Based on how they lost, they deserve a spot in our Super Bowl recipes lineup. That, and the fact that this recipe will be a huge success for you!

Po’ Boys come many different ways, but our favorite is with grilled shrimp. We’re going to teach you how to construct this incredible sandwich and also how to create the Cajun mayo topper.

Ingredients

  • 1 pound of 26-30 count shrimp (peeled/deveined)
  • 1 long loaf of soft French bread
  • 3 tomatoes (thinly sliced)
  • 1 bag of shredded lettuce
  • 2 cups of mayonnaise
  • 1 small can of chipotles
  • 4-5 tablespoons of olive oil
  • Lawry’s Seasoning Salt, granulated garlic, Cajun spice
  • wooden skewers

Take the thawed shrimp and place them in a large sealable plastic bag. Drizzle in the olive oil and add in the seasonings. Close the bag and shake the shrimp until they’re covered in all that goodness. Let the shrimp marinate for about 30 minutes and then skewer them for grilling. You should try and have six per skewer, which will work perfectly when assembling the Po’ Boy.

For the Cajun mayo, empty the can of chipotles into a large bowl, and chop them up finely. Add in the two cups of mayo to create the Cajun mayo that will add zip to your creation.

Prep Time

Take the loaf of French bread and cut it into six-inch-long pieces. Slice open the bread lengthwise and then lay the pieces out for the Po’ Boy creation process.

First, you need to make a layer of shredded lettuce on the bottom half. On the top half, give it a smear of your Cajun Mayo, then place the thinly sliced tomatoes on top of that. Your Po’ Boys are now ready to receive the shrimp.

Grill Time

Place the shrimp skewers onto your grill directly over the coals/heat. The shrimp should be only grilled for 2-3 minutes per side to avoid overcooking. Remove the shrimp skewers and gently slide the six shrimp onto the awaiting Po’ Boy sandwiches. Fold together and serve your creation to your guests, who will be ecstatic you honored the Saints in your lineup.

On the Side

We’ll use one of our side dishes to honor the New England Patriots today. We have our favorite baked beans recipe, renamed Boston Baked Beans for this Super Bowl. After our baked beans we have a vegan bean option for you, so be sure to check that out too. We also have another side dish that is one our favorites later on.

Boston Baked Beans

You’ll need several cans of Bush’s “Boston Recipe” baked beans. You also need 5-6 slices of bacon cut into small squares, a small chopped red onion, brown sugar, and honey. Take a Corningware dish or sturdy foil pan and place the beans on the bottom. Sprinkle the chopped red onion across the top of the beans, then add the bacon almost covering the beans. Spread out a thin layer of brown sugar and then drizzle the honey across the top. Cover the pan with foil and bake at 275 degrees Fahrenheit for two hours. Uncover the pan and bake for an additional hour. Right before serving, give the beans a good stir to mix in all the flavors. 

Baked Beans Vegan Style

Check out this method for making baked beans from LWOS Life’s own Christina Griffin. Christina brings a healthy and delicious-sounding recipe to an old favorite. She writes:

“There’s no secret these baked beans are vegan, but, boy oh boy, are they flavorful. The liquid smoke really takes the place of the bacon here, plus your friends probably won’t even notice the absence!”

“The trick to these vegan baked beans is balanced flavor. It can be challenging to find the perfect ratio of smokey, sweet, and salty, but this recipe hits it on the nail.”

Dirty Rice

Dirty rice is one of the tastiest sides around and gives you another chance to sneak in a Saints-themed dish. Because yes they were robbed! Buy two or three boxed dirty rice mixes and follow the package instructions. To make your dirty rice memorable, use Italian sausage instead of ground beef. It’s that simple. The Italian sausage offers a flavorful change from the dirty rice everyone is used to. For your more daring guests, you can also use hot Italian sausage or hot breakfast sausage for an extra kick!
